-Granny Tate's pound Cake
This recipe has been in my family for a long time and has always been a family favorite.
Ingredients:
1 stick butter
1 cup of shortening
3 cups of sugar
1/2 tsp salt
1/2 tsp baking powder
1 tsp vanilla
5 eggs
3 cups plain flour
1 cup milk
Bake at 350 degrees Fahrenheit for 1 hour and 15 minutes.
The cup of shortening in the recipe is added to give the cake a quality texture. Shortening gives the cake the moist texture as well as the crunchy and crispy texture. Because shortening is 100% fat it gives the cake a quality texture. To market this cake I would want to change from shortening or use less due to the high fat content but I don't want to sacrifice quality for calories.
The vanilla in the recipe gives the cake its sweet flavor. Vanilla is a very expensive ingredient but the flavor it provides to products can not be copied. The vanilla also gives the cake a good aroma.
The baking powder in the recipe acts as the leavening agent for the cake. The leavening agent causes the batter to rise giving the cake its fluffiness. The powder acts by enlarging bubbles already present in the batter.
The salt in the recipe controls the leavening agent while also contributing to flavor. If salt was not added the dough would rise at a faster rate and the air pockets would enlarge so much that the cake would have holes in it. In addition salt adds to the flavor of the cake.
Cake is a very popular product in todays time so not many things would need to be changed to market this product. As mentioned earlier you could possibly substitute the shortening to control fat content but you don't want to lose quality.
